Two Very Different Easy Sweet Potato / Yam Recipes

Extremely economical! One sweet potato for every two people. Yams are the same as sweet potatoes, at least for this purpose.
Microwaved Sweet Potatoes with Honey Butter
Peel sweet potatoes. Try to get long, uniformly thin potatoes.
Wash the peeled sweet potato. Taking a knife, make a few slits in the sweet potato so it doesn't explode in the microwave. Cover it with plastic wrap, sealing fairly tightly.
If your microwave has a "potato" setting, microwave using that. If not, it's about 6-7 minutes per potato, depending on thickness. You'll need to experiment.
It's easy to finish this off in the oven, if you prefer... take it out of the microwave, roll in aluminum foil and seal, and put it in an oven about 350 - 400 degrees. You can't really hurt a sweet potato unless you burn it. So keep checking.
When it is done, it will be nice and mushy. (It often just requires a microwave. Or, if you're cooking a turkey, you can just roll the sweet potatoes in aluminum foil and cook them in the same oven as the turkey at low heat for hours.)
Serve with honey butter... Take a few pats of butter, a teaspoon of honey, and soften for a few seconds in the microwave. Stir and slather over your sweet potatoes!
Roasted Sweet Potatoes
Peel sweet potatoes and cut into thin rings. Lay in a single layer on a baking sheet, drizzle with olive oil and salt, pepper, and whatever spices you have lying around that seem yummy, and bake at 375 for about 20 minutes, until the outside is a bit crisp and the inside is soft. Not bad even if you leave the whole thing to crisp up.
